Salon de Hifumi-an offers International courses for foreign attendees to whom interested in Japanese culture and cooking. In each course, there will be an interpreter, and you will enjoy the master chef's demonstration and hands-on training.

1 day  Japanese cooking  class

1 day program to experience in depth Japanese food and culture at once for tourists and business travelers.

*No fixed day offer. With minimum of 6 attendees, program will be offered any time.

Japanese home style cooking class

      

In this course, you will experience demonstration and hands-on traning of popular Japanese home cooking menus.After the hands-on traning, all attendees will have luncheon party together to experience the atmosphere of Japanese family at a table.

SUSHI cooking class

 

 

 

 

 

 

This Sushi course is a hands-on style lesson to learn Temari (hand rolled) sushi, Maki(sea weed wrapped) sushi, Miso soup and small dishes. The lesson is designed so that you will be able to make them on your own after the lesson.

SUSHI and Japanese home cooking course

This Sushi and Japanese home cooking course is a hands-on style lesson to learn basic sushi and Japanese home style cooking. The lesson is designed so that you will be able to make them on your own after the lesson.

Hifumi-an owner  chef  Takamitsu Aihara's   Japanese cuisine demonstration class

 

 

 

 

 

 

It is said Kaiseki Cuisine is a Japanese cuisine version of full-course. 

A Hifumi-an owner chef, Takamitsu Aihara gives a demonstration lesson. ‘Japanese Restaurant Hifumi-an’ won one star on ‘MICHELIN TOKYO’ and are appeared on ‘MICHELIN Voyager Pratique Japon’.

At first, the chef explains Japanese cuisine and the menu and then demonstrates some dishes.

After the demonstration, all participants will have Kaiseki full course in a Japanese room.

After that, participants will have ‘Japanese tea time’ with matcha and Japanese sweets.

If you wish, participants can have an opportunity to learn Japanese table manner.

Seasonal bento class

             

‘Cherry blossom bento’ is for spring time and ‘Maple leaves bento’ is for autumn time…

Participants will make ‘Japanese seasonal bento’ in this lesson. You can enjoy both tongue and eyes.

You will also experience Japanese classic events; ‘Cherry blossom viewing’ ‘Maple leaves viewing’ etc. associated with bento. After cooking, all attendees will have bento party together.

After that, enjoy ‘Japanese tea time’ with matcha and Japanese sweets.

Study about Japanese seasonings
Difference between heavy soy sauce,thin soy sauce and thick soy sauce.
Proper use of mirin (sweet sake for seasoning) and sake .
Variety of all-purpose seasoning.

Lesson 5
How to fillet fish
Learn how to fillet sardine,horse mackerel and d istinguish fresh fish.
Cook simmered fish dish


Lesson 6
Review of  basic cooking lesson
Review of lesson 1 to 5.
Achieve knowledge of basic Japanese home cooking
